Speedy Wild Salmon Salad
Salmon is very healthy, fairly inexpensive and utterly delicious. Salmon salad is wonderful for sandwiches and for stuffing tomatoes.
Stick to canned Wild Salmon which has lower concentrations of mercury and contaminants. Some farm raised salmon has been found to contain high levels of PCBs and contaminants.
When you open a can of salmon, you’ll usually find two or three long backbones that should be removed before you prepare the salad.
This gets easier and faster with pratice. Simply slide out the backbones and discard them.
Add a large chopped onion, several shakes of prepared mustard and enough mayonnaise to hold it all together. The ingredients always seem to vary, which means the salmon salad always tastes a little bit different each time you prepare it.
Mix it up well, serve it on toast. Garnish with fresh spinach greens to add some crunch.
