Rowdy Rice
Red rice from Thailand is wonderful. You can buy it in Asian super markets. It’s not terribly expensive, and it has lots of flavor, color and character.
No matter what kind of rice you buy, consider adding Tumeric before you cook it. Tumeric is touted for it’s good health benefits on the Eleven Best Foods You Aren’t Eating list.
Add a large spoonful of peanut oil or canola or soybean oil to a heavy iron pot then a cup of uncooked rice. Heat it to high and stir it constantly until the rice kernels begin to open. This usually only takes about 3 – 5 minutes. The gives the final cooked rice a nice bust look.
Have your water ready, I use 2 cups of fresh water to each cup of uncooked rice. Add 2 chicken bouillon cubes instead of salt and a healthy dash of Tumeric.
Cover and cook on low for 45 minutes or until all the water has been absorbed.
